I've got the new head gasket installed, and the compression is good on all 4 cylinders now. I cleaned up the carbs, and I'm going to replace the dry rotten fuel lines on the motor today.

Next, I want to see if it'll fire up, before deciding if it's worth putting any more time/money into this motor.

Do I have to hook up the wiring harness to do so?? Or can I use the pull start without it? I haven't gone through the wiring since I removed it from the boat, some of it may need to be replaced- I don't mind redoing it, but I'd like to make sure that the motor is going to run before doing so... Can I run it without the electrical 'stuff' hooked up? Thanks.

Check for spark by removing the wire from the magneto and pulling it over with the recoil.
If there is a generator you need that ( harness ) hooked up to a battery.
If you have spark ( like a lightning storm ) / clean carburetor / timing marks all lined up / compression then it will run.

Without the wiring connected, will I still get a spark? The ignition switch circuit obviously won't be closed- so am I correct in assuming that there would be no spark without it closed?

I'm getting close to where I want to try firing her up- Looks like the weather might cooperate for wheeling it out tomorrow and getting some cooling water to it, I just want to make sure I do it right :)

A magneto ignition circuit should be
" open "----to run and shorted out to
" stop "
